It's not Arabian, it's Levantine (Syria, Lebanon, Palestine) and last I checked, the Levant is Mediterranean. Oh and btw, this dish is also prepared in Turkey and Greece. If we want to be exact, this dish is Eastern-Mediterranean. Eastern-Mediterranean countries all have similar dishes. Syrian food is much? closer to Greek food than it is to Arabian (as in, the Gulf) food, so the guys in this video made a correct statement.

This dish is prepared? by countries where eggplant is growing.I do it simpler, Eggplant+Tahini+Garlic+Salt.Still great result. P.S The way you cut the eggplant is not safe, you can slash your wrist.Direction of cut must be from you and not towards you.Or use a hard surface.

You said that if the eggplant didn't bounce back when you pressed on it that it was over ripe and you should leave it on the vine..did you mean under ripe? Other wise that statement doesn't make sense. Also, does the eggplant lose it's bitter flavor when it is roasted? I was always told to put salt on it to get rid? of the bitter taste. Thanks.
