excellent recipe, very skill full basic cooking. And you simmer for 1 !/2,hours. That's good. You know that the chemical structure of tomato sauce changes when the lycopeen from the tomatoes is released. And this only happens after a long simmer.Just try this? method yourself, and be aware of the changes the sauce makes. Structure and flavour come all together like MAMA ment it.
